Hello is said as hello, as India is a diverse country with many languages they have different words denoting hello. Otherwise it's the universal hello.In marathi you call it namaskar

In Hindi its namaste

and similarly Good Bye- Alvida/Addresing to muslims-Shabba Khair/Khuadaa Hafiz/Addressing someone in night-Shubh(Good) Raatri(Night).

Just so you know, the language is Hindi, the people are Hindu. (I should know; I'm from India) And just as you probably suspected, you say "Namaste". But it is actually pronounced,"Naa-must-A".
