How do you answer 'Give an example where you learned a new skill or acquired additional knowledge outside the scope of your academic course' in an interview?

Answer

Well, they want to know what LIFE experience you've gotten.

If you love to work on computers, for example, there are probably computer skills you've learned outside of the classroom (tips, tricks, working on consumer software such as AOL, etc.). If you want to be a wildlife biologist, maybe you met a park ranger who taught you wildlife facts. That's "out of classroom" learning.
