That depends. If you like her and just don't want to dance just say that. She should understand. You can even suggest going somewhere a tad quieter so you can converse. If you just don't like her and don't want to lead her on just say you are not good at dancing and excuse yourself from the conversation... I know.. Seems mean but sometimes being blunt with someone is the best way to get your message across.
