Alkaline reversion happens when microbes metabolize all the sugar with production of acid, then with continued incubation, the amino acids in peptones are metabolized and ammonia may be released as a waste. this in turn reacts with water in the medium to form the base ammonium hydroxide, an alkaline waste, which neutralizes the acid and elevates the pH
So the way to avoid alkaline reversion is to elliminate the microbe concerned.
