I pick all my strawberries and don't do anything with them until fall. Then in the early to mid fall I cut them down with our lawn mover. By winter they will have grown back some. I don't do anything with them over the winter. Then in spring when frosts are a problem I put hay over them. If you are worried about cutting them with a lawn mover don't be it won't do them any harm. Another thing that i should tell you is that don't put too much hay over them.
