Yes you can! Just watch the following video on YouTube. You have to connect the Ipod to a PC or Mac and unhide files and you delete a file called "locked". Yes it is that simple. I used this myself after hunting everywhere and it does work!

Required Items:
Set Up Procedure:
1) Connect your iPod to your machine and verify that it appears as a standard drive in "My Computer". (ex: "Joe's iPod (G:)")
Note: If it doesn't appear and you have iTunes Installed, make sure "disk use" is enabled.
2) Go To Control Panel -> User Accounts -> Select Your Account -> Related Tasks - > "Prevent a forgotten password". A Wizard should appear.
3) Select Your iPod's Drive Name -> Enter Current Password -> Finish
Once complete your iPod should be setup as a password recovery disk. Do not delete the "userkey" file, which you may see when browsing your iPod's contents. To test your recovery disk do a quick Log Off and try logging in with an incorrect password. Select "use password reset disk". Then proceed and select your iPod's drive name. If all goes well it should you will be allowed to create a new password.
Note: Non-iPod users can use the same procedure to save the "userkey" file to a Thumbdrives, CDs, floppy, Memory Sticks, etc.

You know there is the lock/unlock thing on the top or bottom right? If that doesn't work to reset it hold down the middle circle and top portion of the circle button at the same time and hold until the screen goes black. Let go and soon an apple will appear. If you wait / press some buttons (i am not completely sure how this part works) it will turn white and then the screen will appear again. You have all your music and everything still but the problem should be gone. This also works if your IPod ever freezes.
You go to settings>general>passcode lock>(enter your passcode if there is one) and go to change passcode lock
I assume you have activated it and don't know your password. All you have to do is sync it with iTunes.
Simply select Extras off the main menu, and pick screen lock. You can also put it on the main menu for easy accesss by going to Settings > General > Main Menu, and slecting Screen Lock.
press the home button...

There is no way to undo iOS 7 after restoring your iPod because iOS 7 is not released yet. However, to downgrade the iOS of your iPod simply download the firmware of the iOS you want from the Internet. While in iTunes, hold shift as you click "Restore my iPod to factory settings" and choose the file you just downloaded and your iPod should be on a lower iOS.
