It's the help with the sticky-ness factor! When dough is chilled it is much easier to manage.


It actually prevents the dough from spreading too much. It is usually not that necessary when making drop cookies (depending on how you like your cookies) , but crucial for rolled (i.e. sugar cookies) and stenciled cookies

When you're saving the dough for later, you can pretty much keep it for as long as you want. Sugar cookie dough, for example. If you're going to use it right away,it varies from 45 min to 2 hours.

Usually recipes call for chilling cookie dough to make it firmer for you to handle to place on the cookie sheet. Adding more flour would also make it firmer but changes the texture and taste of the cookie.
