You can do this with some things and not with others. If it is something that will work with either, the amounts would be the same. Some recipe require the shortening because of it's higher melting point.

Use 2/3 or 3/4 cup vegetable oil (I use canola) for each cup of shortening or butter.

Yes, melt it and let it cool down a bit but i'd say mayonnaise would be better

every 1/2 cup of oil would be about 2 table spoons of mayo but u can eyeball it
