A beef heart is perhaps the toughest part of the animal, and as such it needs long slow cooking, put it in a large saucepan and simmer it for at least 3 hours then let it cool in the cooking liquid. You can add a few vegetables to the pot (carrots, onion etc) to add flavour the the heart.
