Directions:
In a 3-quart saucepan, heat water over high heat until it boils. Stir in rice, butter or margarine (if using), and salt; heat again until water boils. Reduce heat, cover the saucepan and simmer, without stirring or lifting the lid, until the rice is tender and all liquid has been absorbed -- 18-20 minutes. Remove from heat and let stand for 5 minutes. Then fluff the rice with a fork.
For drier rice, use only 1 3/4 cups water; for extra-tender rice, use 2 1/3 cups of water and cook for an extra 4-5 minutes.

Before cooking rice, it is essential to rinse it well with cold water. After you rinse the rice, put it aside while you bring a pan of lightly salted water to the boil. When the water boils, add the rice, stir, cover and reduce the heat. Let the rice simmer for about 12-15 minutes until the water has almost all been absorbed and the rice is tender. Remove from the stove, drain off the excess water... and voila.. boiled rice.
