How do you cut a mango? |
[Edit]
The Magic of a Mango
- Mangoes have a large, white, flattened elliptical pit that doesn't separate easily from the fruit. Here's a trick I learned on the Martha Stewart show about how to cut a mango:
The best approach is to cut the fruit in half beginning from the stem. As you move your knife down, you will feel the top of the pit. Continue your cut down, angling just away from the pit and then back toward the center at the bottom of the fruit. With experience, it will be clear how the pit is oriented in the fruit. Repeat on the other side to shear the fruit from the pit. You will then be left with two thin strips on the sides, which you can also cut off.
The skin of the mango is fairly tough and not pleasant to eat. Place the cut strips skin-side down on your counter and cut the fruit into cubes just to the surface of the skin. Then, pick up the strip and push the skin up toward the center. The strip will open up like an umbrella and it is easy to run your knife just along the skin to liberate your cubes from the skin.
There's always some fruit left clinging to the pit which I gnaw off as my reward for cooking!
