You really can't delete all your contact from iPhone interface. You will need to synch it with PC or Mac, where you can delete all the contacts before the synch. Then, synching will remove all contacts.
However, after IOS5, only one iTunes can be used to synchronize with iPhone contacts. The easiest way to manage address book is to download apps such as PhoneBook Plus Lite, which is free, or use the PhoneBook CleanMaster, which can batch delete and merge contacts.

go to the contact you want to delete.
then hit edit in the right hand corner i think.
scroll to the bottom of the page that appears and there will be a big red button that says delete. hit that and confirm your deletion.

No once you downgrade, you will be able to throw all your information including contacts and photos on to the new iOS that you downgraded to.
You need to delete them one by one by selecting the entry you wish to delete from your contacts, select the edit button then select delete.

You have to get the Sony Ericsson Suite to copy them all into my Windows contacts. Tidied them up a bit, then synchronised with iTunes. Or you can synchronize your phone directly via GPRS/3G to PhoneCopy.com and then use PhoneCopy for iPhone App to get contacts to your iPhone. And you get cloud backup of your contacts as benefit.
