This is really a very simple matter.
Trying to access all the variables is a very complex task, so just set your pool heater to maintain a constant temperature, and record your natural gas consumption daily, along with the other relevant parameters (water temperature, air temperature and relative humidity).
You will then have a complete chart of heat loss relative to water temp, air temp and relative humidity. Make a note of average winds in the area also as this can affect heat loss as well.
