go to the compose mail and where all the options are (font, size, etc) you'll see a little smiley face, click on that. a whole tab of smiley faces and emotes will show up. just click on them to put it in the email
emotes for chat:
when chatting, just type in your different emotes, they'll turn into faces once you hit enter you just learn them gradually :)
ex: :) :D :P :( :'( :(|) :(:) +/'\ V.v.V <3 </3
