you must download iTunes onto your computer from www.apple.com/itunes, and then install it. when done plug your iPod in to your usb port on your computer with the 30 pin cable. it should show up in itunes under the device list, and from there you can manage your ipod and add/remove songs/photos/videos/etc from it.

Directly from iPod Touch: Go to the movies section, and then tap and hold the movie(s) you want to delete. Slide your finger to the right and a delete button should appear on that movie (don't let go of the movie when tapping and holding the movie). Tap the delete button and delete it.
