Steam distillation yield mint essential oil.

From the essential oil you have two options: Extraction, reduction, and purification. Or you can take the essential oil and perform a re-crystallization.

The first would be to take the distillant, dry it, and isolate your essential oil. Then perform an ethanol extraction on it several times to get most of the methanol out. Then NaOH washes to remove random impurities and alkaloids, then you want to dry it again (Na2SO4 would be ideal). Then you rotovap off your dried ethanol solvent. You should have crude methanol. Take this and perform a cold finger sublimation. Scrape your methanol crystals off the cold finger and bam, pure Methanol.

Or you can perform a re crystallization, but I'm not exactly sure what solvent you would use. so that would take more research, but I know it can be done.
