You go to your bank and ask them to create a cashier's check. They will require your ID, the name f the payee, and of course funds. Since the cashier's check cannot be cancelled after your bank issues it, they'll need to either deduct money from your account or take currency or some guaranteed funds from you. The bank employee will hand you the check and a receipt. They will also keep a record on file. They will also charge a fee, unless you are an especially valuable customer. The check will have the payee's name on it and you can deliver the check to them. Since it cannot be cancelled, the payee should accept the check like cash. Do not lose the check.
