you cant on minecraft but if you have a thing called spoutcraft you can by typing t then it comes up with colours type what it says this is an example §3 then type your words

download spoutcraft forgot where from though then install then type t read the side and then type & then a number after that write the words you want to type like this

sadly, it only works for book and quils

Colored text is as far as signs go unless toy have a texture pack and you have to be in a modded server or client for the colored text to work. if you have the mod the codes are

some modders use '#' to activate color coding and others use "&"

&1 or #1 Dark Blue

&2 or #2 Dark Green

&3 or #3 Dark Aqua

&4 or #4 Dark Red

&5 or #5 Dark Purple

&6 or #6 Gold

&7 or #7 Gray

&8 or #8 Dark Gray

&9 or #9 Blue

&a or #a Green

&b or #b Aqua

&c or #c Red

&d or #d Light Purple

&e or #e Yellow

&f or #f White
