I am not aware of being able to "lock" a message, but you can take a picture of the message by pressing the menu and lock button simultaneously and it will be saved in your photos. This works great for saving random cool things that come across your iPhone.

Sending a text message to an email address can be done through iMessage on an Apple iPhone using iOS. If you don't have an iPhone then this can be done through the TextConnect website.
To draft a text message on iPhone, just start writing the message and exit to save the message as draft.

If you want to copy the text in a text message, you tap the text message and press the Copy button that should appear over it. To paste that text somewhere, you then enter a text field and double-tap where your blinking cursor is to paste. You must be running at least iOS 3 to do this.
