Flambe - When you are coking add a little wine or brandy ( a small amount) to what you have in the saute pan and flip this a little bit toward to burner of the stove and it will flambe ( or flame up). The alcohol will cook off and leave a caramelized flavor of the wine behind. Be careful and have something ready to put out accidental fire you might start with this and DO NOT look down into the pan !
