8 c. sugar
1 lemons, rind and juice
3 tbsp. ground ginger
4 whole cloves, tied in cheese cloth
Note: Nice for apple turnovers and/or a spread for gingerbread.
Cinnamon Apple Preserves
2 apples peeled, cored and chopped
1 cup cane sugar
1/4 tsp. cinnamon
1 tsp. lemon juice
Combine apples, sugar and cinnamon in a saucepan. Cook at low-medium heat for 15-20 minutes, or until apples are cooked, stirring occasionally. As apples cook, mash them with a potato masher. Add lemon juice when cooking is complete. Pour into a sealed jar and chill in refrigerator. Makes about 1 1/2 cups preserves.
