Ingredients:

Remove stems from chokecherries and wash. drain. Add 1 cup water to every 4 cups fruit. Place over low heat and simmer until fruit is very tender,stirring occasionly. Rub pulp through a medium siev; measure, and add an equal amount of sugar. Place over moderate heat and stir until sugar has melted. Bring to a full, rolling boil and cook until mixture sheets(220F.) stir constantly. Seal in hot sterilized jars. Three cups pulp will make about 3 half-pints.

STRAWBERRY JELLY4 c. strawberry juice (takes about 3 qt. boxes)

7 1/2 c. sugar

1 bottle liquid pectin

Sort and wash berries. Crush berries and extract juice. Measure juice into kettle. Stir in sugar. Place on high heat and stirring constantly, bring quickly to a full rolling boil that cannot be stirred down. Add pectin and heat to a full rolling boil. Boil hard for 1 minute. Remove from heat, skim off foam. Pour jelly into hot containers and seal. 8 to 9 (8 ounce) glasses.

  • 2.5 lbs sugar
  • Juice of 2 lemons

Method :

  • Wash the cherries and remove the stones.
  • Put into a pan with the lemon juice and simmer gently until the fruit is soft.
  • Test for pectin. (A food supplement, used to thicken things like jely or jam)
  • Add the sugar, stirring until it has dissolved.
  • Bring to the boil and boil rapidly for about 10 minutes until the jam sets when tested.
  • Remove the scum.
  • Pot and seal at once :)
