How do you make chicken fried rice?

It's easiest if you have some rice that has been cooked and is now cold, and some chicken that has already been fried or otherwise cooked.

Chop a small onion and fry it gently for a couple minutes. Put the rice into the frypan and mix.
While that is getting hot, chop up some cooked chicken into small bite-sized pieces and mix it in with the rice.
Season with black pepper and a little cayenne pepper, add a tablespoon or two of soy sauce - careful, not too much! Taste it to see if it's what you like.
A couple cloves of garlic, crushed or minced very fine, are a nice addition. You could add a small can of green peas.
When the whole thing is hot and tastes good, break an egg into the middle and mix well. It will be mushy at first but will soon get drier as the egg cooks.

Serve and enjoy. Some Tabasco hot sauce goes well with this.
