How do you make fudge without burning it?

Use a double boiler when heating the chocolate. Use your biggest pot and fill it with water and bring it a boil. Put a stainless steel mixing bowl on the top and melt it in the bowl. The steam will heat the food while greatly reducing the chance of it burning.


Fudge is a very time consuming sweet so never try to make it when you dont have a lot of time to spare as the best way to cook it is over a very low heat, stirring often. This way it will not burn and the sugar will dissolve properly. My fudge usually take 1 1/2 to make! I get a good book and read it while i stir :)
