This delightful dish was created for the Australian Opera singer, Dame Melba. The dessert is simply poached peaches on vanilla ice cream with a delicious raspberry sauce. This recipe has altered many times but in its simplest form with quality ingredients this dessert is something special. The main ingredient would be the peaches, of course, but the raspberries are quite necessary for the sauce! Bon Appetit`!!

Peach melba is a dish made up of peaches that have been poached in vanilla, vanilla ice cream and a raspberry coulis (sauce). Some people like to serve it with a spun sugar 'cage' over the peach, and/or a tuile wafer.

For the poached peaches: Make a syrup by boiling 4 cups of water with 2 cups of white sugar. Add the seeds and pod of a vanilla bean. Boil for 5 minutes, turn down the heat to a gentle simmer and add halved fresh peaches. Cook very gently until the peaches are soft - the same consistency as a tinned peach. Remove from the syrup and peel off any peach skins that have not already come off.

If you intend to keep the peaches for a day or so before serving, boil the syrup after the peaches have been removed, until it's reduced by half. Pour over the peaches. Cover and refrigerate until required.

For the raspberry coulis: Pass fresh raspberries through a sieve. Add icing sugar to taste.
