Fondant, as you probably know, needs to be kept pliable but not too loose. Adding regular liquid food colouring tends to make the fondant too soft and adding more icing sugar just lightens up the colour.
For a good intense "hot pink" you will need to get to your closest supplier of cake decorating supplies and purchase the paste food colour. It comes in a small container (which you should be able to by separately). Mix in a small amount, knead the fondant (use gloves, no one need hot pink hands) and add more food colouring until you reach your desired intensity.
If you are using the food colouring to make pink frosting; start with a basic white frosting and add a very small amount of red food colouring. Mix thoroughly and adjust for colour, the more colouring you use the darker it will be.

Red mixed with a little water will make a pink color. If you are making icing, add a drop of two of red food coloring to white icing in order to turn the icing pink.
