It really depends on why you need to melt the cheese. If you want to use it in a hot dish, just peel off thin slices with a potato peeler and add them to the food while it's steaming; the cheese will melt in and taste much better than if you pre-melted it; also the texture will be good.
If you want it as a dip or fondue the easiest method is to use a microwave oven. Put your cheese in a glass dish, cover with cling wrap, and cook on medium or low. Stir every half-minute. If you need to add flavourings - dried herbs or spices, bacon, and so on - do that at the start. A little mustard, Dijon or hot English, can go in to help the cheese from becoming gluggy, and a splash of white wine won't go amiss.
Fresh herbs can be added when the cheese is melted. This method leaves you with little cleaning up to do, as does simply cooking cheese on toast.
If you want grilled (toasted) cheese on toast, cook your toast and top it with the cheese; return to the grill (broiler) until the cheese is melted. If you want extras such as mushrooms or tomatoes, put them on the toast before the cheese, together with any seasonings, herbs or condiments you wish to use. This will keep them plump and delicious, while the cheese will just blissfully melt over it all.
