I have an iPod Nano so the way this works mightg be different.

Normally, if you have pictures in My Pictures will automatically be on your iPod when you sync it.

If there are pictures on you iPod you don't want on it after you have synced you iPod, connect it to your computer, then select you iPod in the 'Devices' on the left collum, then select the photos tab and you should be able to get only the pictures you want on your iPod, on your iPod, if you have them sorted.
