Your playlist is currently sorted by category. Deselect the sorting by clicking on the second to left-most blank tab (the one on top of the song numbers) and re-arrange your songs as you will.
The easiest way to edit multiple songs on iTunes is the click on all the songs you want to edit while holding down the apple button. That should make all of the songs you clicked on become highlighted. Then when you have selected all the ones you want to edit, just right click on one of the songs and select Get Info. Then a warning will pop up asking if you are sure you want to edit multiple songs at once and just say yes. There you go!
PC: Right click on the song you want to rename and there should be a tab that says "rename". Click it and you should be able to change it.
MAC: You can try to double click the song and it might let you rename it but if that doesn't work, hold the "fn" key in the bottom left corner and click the song and you should be able to rename it.

Once complete it will usually requires a computer restart. If not, you must close iTunes for the next step to work due to "File In Use" issues. Go back to C:\Users\(your username)\Music\iTunes and rename newly-created "iTunes Library.itl" to "iTunes Library.NEW" (or just delete that file). Then rename your old file "iTunes Library.OLD" back to "iTunes Library.itl". When you next open Itunes your old library will be accessable.

Sometimes iTunes gets confused and cannot remember where your songs are so you need to give it a guiding hand. Quit the iTunes software before you start. Your songs are stored (in Mac OS X and Windows 7) in a folder called iTunes within your Music folder (in earlier versions of Windows it will be in My Music within the My Documents folder). In that iTunes folder find the file called iTunes Library and drag it out onto your desktop. Go back into the iTunes folder and find another folder called Previous iTunes Libraries. In there find the latest version (it will be called iTunes Library Year-Month-Day) and drag that out into the main iTunes folder to replace the old iTunes Library file you removed. Rename your new file iTunes Library (by removing the date part) and then relaunch the iTunes software and it should now be able to find your songs again.
