When you accept a job offer, you agree to a contract of employment.
Strictly, you should then terminate the job only according the the requirements of that contract. This may require notice in writing; but it may be sufficient to say, "I quit" and walk out.
In English law (except in the army, police, and some other careers) you can never be forced to honour a contract of employment by working; but if you quit without following proper procedures, you may be liable in damages. However, to secure damages, an aggrieved employer would have to show that they suffered loss, which may be tricky to do (and the employer will probably not bother).
You can talk to the person who offered you the job and ask for what you wanted. You may or may not get the revised job offer you are looking for. It never hurts to ask though.
on an application how would i describe "special interests" ?

Job interviews do not give you qualifications. Qualifications are obtained by assessment and examination. This may take the form, in part, of an interview but it would not be a job interview.
I never heard of anyone charging to interview people for job positions.
In preliminary interview the applicant is given the job details enabling him to decide whether the job will suit him.
a job interview is called 'un entretien d'embauche' (specifically to get hired) in French.
