If you are running iOS 5 or later, you can just swipe across to delete them from the device. If you are running any older iOS, you have to plug your phone into your iTunes authorized computer and either unckeck the audiobook and sync your phone (if you have iTunes set to automatically manage media) or open you iPhone's library on the iTunes sidebar, find the audiobook and delete it (if you manually manage your iTunes media).
