It depends where; in Microsoft Word for example you can give the command "Insert | Symbol". There is an infinity sign among the variety of symbols there. For other programs, in the case of Microsoft Windows, you can use the CharMap utility to search for characters. From there, you can copy and paste symbols to different programs. Other operating systems should have some equivalent utility.
