Avocados only will ripen after picking. To speed the process up, the standard way is to place them in a paper bag in a warm spot with a ripe apple or banana. This method applies to ripening most fruit because the ethylene gas given off is the ripening agent and is used commercially - often with less than delicious results when done artificially. Some people recommend using flour or rice in the bag instead, but I haven't tried it.

To ripen a hard avocado, place in a brown paper bag and leave at room temperature for a few days.

To speed up the ripening process, put an apple or banana in the bag with the avocado.

Test the avocado for ripeness by cupping in the hand and using the thumb to press very gently at the stem end of the fruit. If you press anywhere else it will bruise the avocado.

When the avocado is ripe, you can keep it refrigerated for a couple of days. Put it on a folded paper towel or other soft surface: leaving it directly on a hard surface will damage it.

Your greengrocer might be able to give you some of the paper liners they use to store avocados; this will keep them undamaged at home, in or out of the fridge.
