1. Place game you want to install in disc tray
2. Navigate to where you launch the game from the main dashboard.
3. Press Y for "game info"
4. Scroll down list until you see "Install to Hard Drive", press it.
5. Bam! It's now installing. This can take 5-10 minutes easy, since most games are around 5-8Gb in size from what I've seen

* Whoever answered this is completely wrong. You can save Xbox games into your 360. You will just be forced out of the Dashboard and offline. When you start a new game with whatever Xbox game you have, you are allowed to save it.
If your trying to save a game that was downloaded from xbox live, it should do that automatically. But if you have a game on a disc and want to download it to your hard drive you have to look at the game options.
When you go to the dashboard, look at the panel for the game itself. Under the panel on the bottom of your screen, their is a list of buttons and what they do. I believe it is the "Y" button that will bring you to the games info screen. In that screen there are several options, the last option says, "Save to hard drive" or "Download to hard drive". This option will take a little while, maybe 25 minutes to an hour, depending on the game.
This will also allow the game to load faster when you play it, because the game is being read directly from the xbox instead of from the disc itself. For example, in Halo Reach, the maps can take a while to load while playing online, and this will allow them to load faster.
