You can only stain a leather that is an aniline style leather (one that absorbs moisture easily) as the leather has to absorb a dye. In this instance you may be able to change the colour.
On pigment style leathers or semi aniline leathers you need to use pigments to change the colour but it is perfectly possible as long as the leather is in good condition. it is preferable to have a specialist to do this work (DIY kits on the internet do not work) as the preparation and refinishing processes are critical to its success.
