ANSWER:That's funny. The pecan has 2 separate shells on it. The first splits into four or five sections exposing the hull of the pecan that we harvest. When the pecan falls to the ground on its own it is considered to be mature. Some farmers use a shaker and manually make the trees drop some nuts prematurely. Some of these will be unripe and have a yellow tint to the nut and very bitter to the taste. There is no scientific method without cracking the nut. If you shake one and hear a nut inside, it is lost too much moisture to be any good and considered to be rotten.
