Examine the meat first and if you notice areas that are not colored or appearing the same as the rest of it you may have freezer burn. This occurs when air comes in contact with the meat for a long period of time. Also, smell the chicken and if it has any unusual odors you should not take any chances with it. It is far better to discard a piece of chicken that to fight a round of food poisoning. When freezing, try to get as much air our of the freezer bag as possible to keep meat and other products from suffering freezer burn.

If it has developed freezer burn the flesh will start to look white and stringy. If this hasn't happened it's fine. Even if it has happened, you can trim these areas and still use the chicken - especially if it will be cooked in a liquid (stewed, poached, or boiled).

Chicken that has been cooked really depends on if it has sat out before being put away. If you have leftover chicken that has sat out more than a few hour's I would toss. Especially in hot weather. If it's from an evening meal our rule is to toss after the 2nd reheat if used within 3 days( starting with the day it was cooked)
