I think you have to have more than one cow. When my farmer dad noticed a cow riding another, meaning it climbed and put its front hooves on another's back end, he would call the breeder. (But us kids weren't supposed to understand this stuff.)
When a cow is in heat it will hump up on other cattle. This is called "bulling". Other cattle (cows and heifers) will try to bull her. One sign. If the cow on the bottom walks during bulling, the cow on top is the one in heat. If the cow on the bottom stands still during bulling, then the bottom cow is in heat.
