You can do it by going to straight talk website and logging on into your account or by calling customer service. If the phone is not new and was activated under another account you need to make sure that person has cleared the information allowing you to activate it under your name.
If the new phone is on the same network - simply swap the SIM card. If not - you'll need to contact your existing network provider for a Port Authorization Code (PAC). Some networks will charge for a PAC - some won't. Once you've been given your PAC - contact your new provider and give it to them. They will use the code to set your phone up on the new network.
Alternatively, if you want to keep Straight Talk as a service provider, you can keep your number but switch to a new device. You just have to go to their "Activation" page and follow the instructions.

Okay a universal SIM is a card that you put into any phone by your phone company. What it does is it saves your contacts to transfer them for one phone to another and it saves your phone number on that card so whatever phone you put it in you will always have the say phone number!
Your SIM card will have your number embedded in it. Copy any data you want to keep - onto a memory card or upload it to your computer. Slot the SIM card into the new handset, then - either slot the memory card into the new phone, or copy the data back onto the phone from your computer.
