In any sample of water there are fast-moving molecules and slow-moving molecules. The fastest of those molecules can break free from the surface of the water. This is evaporation. Evaporation leaves behind the slow molecules. Since the temperature of the water is the average energy (speed) of the molecules, the water cools.
The same way that clothes that are out on the line dry. there is a certain amount of water in the air and if this is less then it is able to hold, ie 100% humidity, then the air will literally suck water from what ever source happens to be available. So on very dry days especially if the air is moving a little you will tend to loose More water from the pool then you would on a humid day. Interestingly enough. the same principle applies to ice.
