Twinkies really are just what they say - cream-filled cakes. They are made of cake-type batter (all the recipes are secret - every science program I have ever seen about making Twinkies has said the company will not share exact proportions of ingredients), baked in an oven, and the filling is injected in through three holes in the "bottom" (actually the top during baking) of the cake. Look on a Twinkie package and you will see an expiration date - the company is very concerned that their cakes be eaten while still fresh.
