A 125 cc moped will generally top out at around 55-60 mph. But it really depends on who makes it. Some 125 cc 2 stroke race mopeds will do 70+mph, while some cheap 125cc 4 stroke import mopeds will barley do 52 mph.

Depends on model, headwind, your size and weight.Maxis and older stepthroughs 25 to 30 MPH. VS50 from the 70's, often yellow with a twist grip gear change are faster but I don't really know 35 to 40...
as fast or slow as you want, it depends on the gearing, big front sprocket w/ little back sprocket = speed, small front big rear = torque but with a 14/42 you might reach 75-80 w/ wind at your back
