Well, you have to have some sort of fruit, vegetable or grain to ferment You put the yeast into the mix and it will convert the sugars alcohol. You then take the results and distill it, a process of evaporation and condensation.

It is a very long process. I gets made out of wine, then distilled twice, aged and blended. That's the very short form.

Contrary to popular perception, at least here in the U.S., connoisseurs eschew the use of balloon snifters. The reason is that balloons allow the aroma to escape too quickly, negating a fine cognac's bouquet.

Experts prefer to use either a regular wine glass or a tulip-shaped glass, one that curves slightly in below the lip before fanning out again. It is important that the glass be of fairly high quality as the thinner the glass, the more heat the cognac will draw from your hand. Professional tasters frequently use blue-colored glasses so that they are not influenced by the color or haze of the cognac.

It is usually served without ice.

For a good cognac a cognac glass is essential. It is well-known that Cognac should be enjoyed in the right glass. That is of course, if we're talking of drinking it straight, not as a cocktail or a long-drink. If this is what you're after, any glass will do, but if you want to allow your VSOP, XO or older cognac properly, you will need to give the spirit some space to breathe and unfold all its aromas.

A popular glass is the Normann Copenhagen Cognac glass, but there is also the classic brandy snifter.

Grapes and time. Cognac, like Champagne, is named after the area of France from whence it originates. In order to be considered worthy of the name, the brandy must be produced in the area surrounding the town of Cognac and it must be made at least 90% from three varieties of grapes that grow in the region, Ugni Blanc, Folle Blanche or Colombard grapes. In fact, those are only two of the criteria required by the Bureau National Interprofessionel du Cognac (BNIC), the body that has ultimate control over whether or not a brandy may be called Cognac.

Wine culled from the chalky soil of France's Cognac region has a tendency to be acidic, thin and unpalatable. This might have doomed the terroir to gastronomic obscurity, had the region's vintners not been fortunate enough to discover that this wine was excellent for distilling. Produced from the combination of various white wines (known as "eaux de vie") Cognacs are aged to maturity in barrels before bottling and distribution.

Do you drink champagne cognac chilled?

I think please review the question. Are you asking for champagne or cognac??? Champagne is served chilled whereas cognac is served at room temperature(if drinking neat) or served alongwith warm water. Actually, I believe s/he is asking about fine champagne, which is a type of cognac. You can drink fine champagne either at room temperature or chilled - I personally would recommend chilled.
