Orzo pasta is basically like any other pasta, the name comes from it's shape and size, which looks like barley ("orzo" means barley in italian) It is made from different wheat varieties, the best coming from durum semolina wheat or soft wheats. ∙ 14y agoOn a small scale the preparer will begin with a pile of flour with a recess in the center. Water is added to the recess as well as egg, if desired. Flour is then slowly added to the water and mixed until the resulting dough becomes workable. the dough is then transferred to a well floured surface and rolled very thinly. Once in a thin sheet, the past can be cut into whichever shape the preparer desires.
On a large scale precise amounts of water and flour are combined in a large mechanical mixer and the dough fed into rollers to form sheets. The sheets are transferred to a conveyor belt which will pass through a set of band saws creating vertical cuts through the sheet. A pneumatic or hydraulically powered blade will then cut the sheet at specific intervals to determine the length of the pasta.
