according to Alton Brown it is only necessary to have the internal temp. to 145 that will insure that it is safe to eat. Higher than that it becomes way over cooked.
If you are baking in the oven, 350degrees for 35min. If on top of the stove, simmer on low heat in heavy skillet for 45min.
