It will grow mold before it spoils. You can cut off the mold and still use the cheese. Keeping it cold impedes the growth of the mold. Cheese will keep unrefrigerated for weeks. However, it will dry out and become very bad tasting.

Like many other questions about food-spoilage, this depends on the ambeint temperature where the milk has been stored. In a warm place it will spoil in less than a day. in a cool place it might last for several days.

Cheese does not need to be stored in the fridge if you plan on eating it within 10 days. Do not expose to temps above 75F

Soft cheeses, like cottage cheese, should not be left out of the refrigerator for more than an hour or two.

Not very long, if it's a ripe cheese. Unripe cheeses, also called 'green cheese', has to be left out for it to become ripe. Ripe cheeses, however, can only last less than a day.
