Best Answer

I would try to use it in 2 days, 3 days max. General rule of thumb- anything with mayo mixed with something else means a very short storage life.

It goes quite yucky after 3 days

Really it depends on how you prefer it to taste.

Cole slaw can be served immediately after preparation, or it can be refrigerated for quite some time. The big difference is that the sooner it is served, the crispier the vegetables will be (cabbage, carrots if added), but the cabbage will retain a bit of its "bitter" taste.

The longer those ingredients sit mixed in with your dressing they will soften up a bit, and all of the ingredients will tend to "bleed" together a bit. As to the bitterness, that's a main reason why carrots are added for their natural sugars, that compensate a bit, and the longer the mix sits, the bitterness will tend to dissipate to the taste.
