Generally, the rule of thumb is that nothing stays in the fridge for more than 10 days unless it is preserved or canned. By brined I would assume that they have a high concentrate of vinegar. In that case I would say around 21 days, as long as your fridge stays good and cold.
Vacuum packed spareribs can stay refrigerated for several days. You should cook, and eat them with about five days.
you need to find out what degree temperature your freezer will be when you freeze it.
Cooked ribs should not be left unrefrigerated more than two hours.
A vacuum packed turkey will generally last three days in a fridge. After this length of time it will begin to spoil.

Cheesecake should be safe for 3 - 5 days if stored in the refrigerator.
If it's packed in a vacuum sealed can, such as an Armour Star Ham, it will last an incredibly long time. The can is dated, but WW1 canned rations were opened not so long ago, and were as edible as the day they were packed - and this was with early 20th century canning methods which are inferior to today's! However, if the can is dented the canned food shouldn't be kept for long. Also, if the can is bloated it should be discarded immediately. If you freeze a vacuum sealed ham (plastic wrapped and airtight) it should last at least a year if kept frozen below 10 degrees Fahrenheit - but below 0 degrees is ideal for the longest storage.

The steaks will last for less time than if they had not been left out in the car, unless you car was as cold as a refrigerator. Vacuum packaging does not sterilize the food. In fact, some very dangerous bacteria will grow under such anaerobic conditions.
