You could keep an unopened can in the refrigerator for several month or possibly longer. I'd still use the "best by" date on the can as a guide for shelf life. Keep an eye on the condition of the can because the increase in humidity could make the can start to rust.

I'm no scientist or doctor but I don't think it's a good idea to keep it for more than a week. Having said that I am guilty of eating it after about a week and a half and I didn't get sick. I just made sure I boiled the sauce for a couple of minutes before I added it to the freshly cooked spagetti.

Even foods such as canned vegetables, evaporated milk, etc. have expiration dates on them. Also, always check the can for signs of bulging, especially on tomato products. If there is even the slightest sign of bulging, THROW IT OUT! Botulism is the most dangerous form of food poisoning there is, and is more common with tomato products.
