The length of time that refrigerated meat will keep is dependent upon a number of factors, including

* the initial bacteriological load on the meat * the type of meat * handling throughout processing, distribution and sales * packaging * actual storage temperature of location in the fridge (the colder the better)

* raw or cooked

Raw ground beef can start to go in a day or two. Roasts can last up to 5 days or possibly longer.

My mother always went by a seven day rule if it's cooked. If you are talking about raw meat, there should be a "sell by" date. You shouldn't go more than two days past that. Most raw meats will start to get spots of dark gray on them when they are going bad.

Uncooked meat should be good 1 - 3 days stored in the refrigerator, depending on the type of meat. Poultry will be good 1 - 2 days, others 2 - 3. Cooked meat should be good 3 - 5 days stored in the refrigerator.

unthaw meat can stay in the fridge for no more then 2 days because after that it's considered unsafe to eat... cooked meat can stay out in room temp for no more then 4 hours after that bacteria starts to grow which cause sickness if the meat is eaten

Typically you should follow the two hour rule. If it's been in the danger zone, which is between 40 degrees and 140 degrees Fahrenheit, for more than two hours then you should discard it.

Exceptions might be something like if you left it in the car in the middle of winter when the temperature is below freezing.
